Fun Weekend Lunches

Let's do lunch!I really enjoy cooking on weekends, especially when friends help in the kitchen. 

These recipes are easy to make for a crowd.  Can you tell my "gourmet touch" on each recipe?  I just l-o-v-e good food!

Mini Pizzas -- make 'em yourself, just the way you like 'em!

Grilled Peanut Butter and Jelly Sandwiches -- it doesn't get any better than this.  The classic PB & J made ooey, gooey, and hot!

These are fun pizzas that you can make on English muffins.

What you need:

  • 2 English muffins (4 halves)
  • 1/2 cup tomato sauce
  • 1/2 cup shredded Mozzarella or Monterey Jack cheese
  • Sliced salami or pepperoni-optional
  • Cookie sheet

How to make it:

  1. Preheat oven to 400° F. 
  2. Carefully split the English muffins with a fork.  Don't use a knife: you will ruin the texture.  Just poke through with a fork from different sides of the muffin and it will split apart.
  3. If you want crispy crusts, lightly toast the English muffin in the toaster.  Arrange the English muffins on a cookie sheet so they are not touching.
  4. Put about a tablespoonful of tomato sauce on each English muffin.  Use however much you want, but don't make it too goopy.
  5. Sprinkle some of the shredded cheese on top of the tomato sauce.  Use as much as you want.  
  6. Remove stray bits of cheese from the cookie sheet; otherwise they will burn in the oven and make a mess.
  7. If you have salami or pepperoni, add a slice or two to each mini pizza.
  8. Bake until the cheese melts; it takes about 5-10 minutes.  Take the pan out of the oven using pot holders.  Let the pizzas cool a few minutes before serving.

Makes 4 Chris Pizzas.  Enjoy! Mama mia, it's good!

Grilled peanut butter and jelly sandwichGrilled Peanut Butter & Jelly Sandwiches

It's hard to improve on a classic like peanut butter & jelly sandwiches, but I have really hit on something here.  Grilled PB&J and a glass of milk -- that's one perfect, ooey-gooey sweet lunch. 

What You Need:

  • Two pieces of bread
  • Peanut butter
  • Jam (jelly gets pretty runny but it works in a "jam")
  • Skillet or griddle
  • Butter or cooking spray
  • Spatula

How to make it:

  1. Make a peanut butter and jelly sandwich, but don't cut it (keep it whole).
  2. If you are using cooking spray, lightly coat the skillet.
  3. Turn a stove burner onto medium heat.  Place the skillet on the stove.  You can let the skillet sit for a few seconds, but not for long.
  4. If you are using butter instead of cooking spray, place a small slice of butter on the skillet and let it melt. Tilt the skillet a little so that the butter covers an area that is as big as your sandwich.
  5. Carefully set the sandwich in the skillet.  Let it sit long enough to brown the edges of the bottom side, checking the sandwich by lifting an edge gently with the spatula.
  6. When one side is brown, flip the sandwich over and let the other side cook. 
  7. When the second side is brown, turn the heat off and use the spatula to take the sandwich off the skillet and put it on your plate.  Careful, it's hot!
  8. Slice the sandwich in half (notice how nice a diagonal cut looks).  Pour yourself a glass of milk, and enjoy! 

It's easy to make Grilled PB&J sandwiches for several people.  You can use a bigger skillet and make two at a time, or use a griddle if you have one.  Your parents will know what I am talking about.

You can make grilled cheese sandwiches following the same basic cooking instructions.  Just substitute two slices of cheese for the peanut butter & jelly in Step 1.
