A quick breakfast of nutritious foods will do wonders for your disposition -- and for your grades!

Here's a morning version of that old favorite.  Granola, fruit and yogurt are so good and healthy that everyone will want this breakfast treat!  You can make this very quickly on school mornings.

What you need:

  • One bowl
  • Banana
  • One cup of fruit-flavored yogurt (if you buy it in big packs) or just one pack yogurt
  • One tablespoon granola, Grape-nuts or Rice Krispies

Extras:

  • One maraschino cherry
  • Sprinkles, chocolate chips or chopped nuts

How to make it:

  1. Slice the banana, and arrange it in the bowl.  You can make little slices or the traditional banana-split long ones; it doesn't matter.
  2. Spoon the yogurt on top of the bananas. 
  3. Sprinkle the granola, Grape-nuts or Rice Krispies on top of the yogurt.  If you want extras, put a cherry on top or add sprinkles, chocolate chips or chopped nuts.
  4. Enjoy your healthy breakfast banana split!

Makes one Breakfast Banana Split.  Note: if you prefer, you can use different fruits like strawberries, oranges or melons with yogurt and toppings.

Chocolate Chip MuffinsChocolate Chip Muffins

Bring the world's best cookie to your breakfast table!  Chocolate chip muffins go great with eggs, fruit or a Breakfast Banana Split.

What you need:

  • Muffin tin: either a 12-muffin tin or two six-muffin tins
  • Bowl for mixing
  • 1 egg
  • 2 cups Bisquick, Jiffy, or other biscuit baking mix
  • 1/4 cup sugar
  • 2/3 cup milk
  • 2 tablespoons vegetable oil
  • 1 cup chocolate chips
  • Nonstick spray or paper baking cups
  • High Altitude: 2 tablespoons of flour

How to make it:

  1. Preheat oven to 400° F. 
  2. Grease the bottoms of the muffin cups, or line them with paper baking cups.
  3. Break the egg into the bowl, and beat it slightly.
  4. Add the biscuit baking mix, sugar, milk and vegetable oil, and stir until the mixture is moistened and looks like muffin batter.  High altitude: if you live at 3,500-6,500 feet, you also need to add stir two tablespoons of flour into the muffin mix.
  5. Fold in the chocolate chips: this means that you sprinkle a little in, stir that into the mixture, then sprinkle a little more, and stir again until you've stirred in all the chocolate chips.  DON'T ADD EXTRA CHOCOLATE CHIPS!  I know it's tempting, but I tried it and it just makes a mess -- then you can't get the muffins out of the baking tin.
  6. Divide the batter evenly among the muffin cups.
  7. Bake until golden brown; it will take about 15-18 minutes.
  8. Take the muffin tins out of the oven using pot holders.
  9. When the muffins come out of the oven, use a dull butter knife around the edges to separate them from the muffin tin, then take them out. 

Be careful, they're hot!  Serve and enjoy!

Alien Alan's Egg-straterrestrial Breakfast:
Alien Alan thinks this recipe looks like little UFOs.  But doesn't he see aliens in everything?  Ha! Ha!
What you need:
  • One slice of cheese
  • Non-stick cooking spray
  • One egg
  • One tablespoon milk
  • 1/2 English muffin or a piece of toast
  • Salt and pepper (optional)
  • Small custard cup

How to make it:

  1. Place the cheese on a cutting board.  Put the cup on top of the cheese, and trim around the custard cup.  The idea is to make the piece of cheese fit in the cup.
  2. Spray the inside of the custard cup with vegetable spray.
  3. Crack an egg into the custard cup.  Add the milk, salt and pepper, and mix with a fork.
  4. Place the cheese on top, and microwave for 30 seconds to 1 minute.
  5. Use pot holders to remove the eggs from the microwave. 
  6. Toast the English muffin or bread.
  7. Place the English muffin on top of the custard cup.  Hold the English muffin in place as you turn the cup upside down.  The egg should fall onto the muffin.  If it doesn't, loosen it by running a dull knife around the edges. 

Enjoy!  The taste is out of this world!
